10 Minute Ginger Scallops with Black Bean and Garlic Sauce
Ingredients
2 tsp (10 mL)Canola Oil
1 tbsp (15 mL) grated ginger root
1 clove garlic, finely minced
2 carrots, thinly sliced
1 lb (500 g) snow peas, trimmed (about 3-1/2 cups/875 mL )
1 lb (500 g) sea scallops
1/2 cup (125 mL) PC Spicy Black Bean & Garlic Sauce
Instructions
1. In wok or large frying pan, heat oil over high heat. Stir-fry ginger and garlic for 30 seconds or until fragrant. Add carrots; stir-fry for 2 minutes. Add snow peas; stir-fry for 2 minutes. Add scallops; stir-fry for 3 minutes.
2. Add Memories of Hong Kong sauce; bring to a boil, stirring often.
3. Serve immediately with boiled or steamed rice.
