A delicious gluten free and dairy free banana bread that will fool anyone who thinks gluten or dairy is a must in baking.
Such an easy recipe, and versatile too! Just switch the nuts out for anything you desire – cranberries, blueberries, chocolate chips, the possibilities are endless.
Ingredients
2 very ripe bananas
3/4 cup sugar
1/2 teaspoon baking powder
1 teaspoon vanilla
1/2 teaspoon baking soda
2 eggs (or egg substitute)
1/4 teaspoon salt
1 teaspoon xantham gum
1 1/4 cup white rice flour
1/4 cup vegetable oil
1/2 cup walnuts
Instructions
Grease pans and preheat oven to 350 degrees F.
In a bowl combine bananas, sugar, eggs, oil, and vanilla. Mix for 1 minute.
Mix together white rice flour, nuts, baking powder, baking soda, xantham gum, and salt in a large mixing bowl. Stir in banana mixture. Mix well (not too much though or when baked becomes too dense). If making muffins bake for 35 minutes, 1 loaf (4 × 8 pans) 40 to 50 minutes.
