Gluten-Free Brown Rice Veggie Burgers. Recipe courtesy of Ener-G Foods. This veggie burger recipe is both vegetarian and vegan, and, can be made gluten-free and wheat-free.
Ingredients
3 cups brown rice, pre-cooked
2 cups soft bread crumbs (use a gluten-free and wheat-free bread)
1 1/2 cup mixed vegetables, finely chopped (try carrot, mushrooms, corn and peppers)
1 Salt and pepper to taste
1/8 cup olive or grapeseed oil
Instructions
Mix ingredients (except oil) together and form 25 patties about 3/4 inch thick using 3/4 cup mixture per patty.
Fry in oiled pan for 8 minutes on each side over medium high heat. Serve alone or on a whole wheat or gluten free bun on bread with lettuce and condiments.
