Gluten-free pancakes packed with protein, soy, & flax.

Ingredients
2/3 c. brown rice
1/3 c. Millet or Quinoa
1/2 c. soy milk
1/4 c. Flax Meal
1 SCOOP PROTEIN POWDER
2 eggs
2 T. olive oil
2 T. Xylitol
2 t. baking soda
2 t. Ground Cinnamon
1 t. baking powder
1/4 t. salt
Instructions
In a dry blender, blend Brown Rice and Millet (or Quinoa) until they turn into a flour-like powder.
Add the remaining ingredients and blend for 60-90 seconds.
Make pancakes.
Rather than syrup, top with nut butter, heated berries (blueberries, strawberries, etc.), banannas, and some soy milk to add moisture.
