Goat Cheese and Roasted Bell Pepper Panini - TastyPlanner.com

This is a fantastic panini. The sweetness of the bell peppers is complimented by the spicyness of the chili peppers and of course goat cheese is great with everything. You’ll need a panini maker or similar type of cooking device.
Ingredients
4 oz. Goat Cheese
8 slices italian bread
1 cup bell pepper
2 TBS dried (or fresh) chili peppers
1 tbs lemon juice
1 tbs extra virgin olive oil
1/4 cup Green Onion
1 tsp garlic, finely chopped
Instructions
1. Slice the bell peppers in to thin strips and place on a pan and bake for 15 minutes.
2. Slice green onions and garlic and mix with goat cheese, set aside.
3. In a medium sized bowl add cooked bell peppers, crushed chili peppers ,lemon juice and olive oil, set aside. This mixture gets better over time as the flavors are absorbed in to the bell peppers.
4. Add your desired amount of goat cheese mixture to a slice of bread then add a proportionate amount of the bell pepper mixture on top, then place the 2nd slice of bread on top.
5. Place sandwich on panini maker, close lid and cook for 5-10 minutes. The cheese should be right at the point of melting and barely turning crispy and golden around the edges.

Is it wrong of me to want to buy a panini maker just so I can make this?
No, this alone makes it worth it, I promise.
In a pinch, one of those little George Foreman grills, or something similar would work just fine.
