Delicious, healthy alternative to potatoes or boring white rice.
Ingredients
100 g brown rice
1 wheat-free vegetable stock cube
2 carrots, trimmed, peeled and finely sliced
1 celery stalk, trimmed and finely sliced
Instructions
Place rice in small saucepan with 200 ml water, add the stock cube and the vegetables.
Bring to a boil, then lower the heat and simmer for 20 minutes or until the rice is tender, but NOT all the liquid is absorbed. Turn off the heat and allow to stand for 10 minutes before serving.
