potato, red pepper & zucchini gratin
Ingredients
1 garlic clove, peeled and cut in half
4 tbsp olive oil
2lbs potatoes, peeled and very thinly sliced (a mandoline works best for this)
2 tsp fresh Thyme
2 tsp salt
2 red peppers, cored, seeded & sliced
1 lb (4 small) zucchini, thinly sliced
salt & freshly ground pepper
Instructions
Preheat oven to 350f.
1)Rub a gratin dish with the garlic and grease with about 1 tsp olive oil.
2)Layer 1/2 of the potatoes in the bottom, overlapping as necessary. Season with some thyme & salt & drizzle with 1 tbsp olive oil.
3)Add a layer of red peppers, then a layer of zucchini. Season with salt & thyme & drizzle with another tbsp of olive oil.
4)Repeat steps 2 & 3. Finish by drizzling any remaining olive oil over the top.
5) Cover tightly with foil & bake until all veggies are very tender, about 1 hour.
