Great Grandma's bran cereal muffins - TastyPlanner.com
This is a family recipe.
2 1/2 cups all-purpose flour
1 1/2 cups sugar
2 1/2 teaspoons baking soda
2 cups buttermilk
1/2 cup raisins
1 cup boiling water
1/2 teaspoon salt
1/2 cup cooking oil
2 cups all bran
1 cup 100% bran (I use raisin bran)
Mix dry ingredients. Stir in the rest. Bake in greased muffin tins 20 minutes at 350.
Use toothpick test to determine if it’s done and cook longer if toothpick doesn’t come out clean.
Note: I like to crush the cereal in a blender (but it works fine whole with the boiling water melting it) and use double or use these amounts but add another cereal like granola. (Use less sugar if cereal is already really sweet.)
