Potato salad with a Greek dressing.

Ingredients
5 large potatoes, cut into 1" cubes
1 small onion, finely diced
1/2 cup olive oil
2 tsp Greek seasoning blend
Sea Salt and Pepper, to taste
Instructions
Boil potatoes in lightly salted water until tender. Drain. Place in a large serving bowl, sprinkle with onion, and cool to room temperature.
Whisk lemon juice, olive oil, and Greek seasoning together in a small mixing bowl until well blended. Season with salt and pepper. Drizzle over potato salad and serve immediately.
