Ingredients
2 chicken breasts, cooked and shredded
3 spring onions, finely sliced
1/4 cup chopped coriander
1/4 cup chopped fresh mint
1/4 cup Asian dried fried onions
2 tbsp toasted sesame seeds
1 tbsp fish sauce
2 tbsp lime juice
2 tsp grated fresh ginger
2 red chillis, seeded and chopped
1 tbsp brown sugar
Instructions
Place shredded chicken, spring onions, coriander, mint, fried onions and sesame seeds into a large bowl and mix.
In a small bowl, mix the lime juice, fish sauce, ginger, chilli and sugar. Stir until sugar has dissolved and pour over the salad.
