Green Chili
Ingredients
4 poblano peppers
14 tomatillos
1 yellow onion
3 cloves garlic, minced
1 JalapeƱo
1 recipe seitan, prepared
1 tbsp Cumin
1 Lime
2 cups veggie stock
1 handful mint
1 handful Cilantro
salt
pepper
tortilla chips (garnish)
Instructions
Char poblanos until completely black on all sides.
Meanwhile, chop onion and jalapeno and saute in stock pot until onions are translucent. Add garlic to pot.
Peel papery skin off tomatillos and rinse. Grind them in a food processor until it’s the consistency of a chunky salsa.
Add tomatillos to pot. Season with a pinch of salt and pepper.
Add cumin and simmer for five minutes.
Add veggie stock and seitan.
Peel off papery skin from cooled poblanos and chop. Add to stock pot.
Add cilantro and mint and squeeze the juice from 1/2 of a lime into pot.
Garnish with crushed tortilla chips.
