Slow Cooker Meal

Ingredients
2 cups frozen black-eyed peas, thawed
1 cup vegetable broth or water
1 large onion, chopped
1 celery stalk, diced
3 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon ground allspice
1/4 teaspoon red pepper flakes
3/4 pound collard greens, stems discarded and leaves sliced 1/2 inch thick
2 cups hot cooked brown rice
Instructions
1. Combine black-eyed peas, broth, onion, celery, garlic, salt, thyme, allspice, and red pepper flakes in 5- or 6-quart slow cooker. Cover and cook until vegetables are fork-tender, 3-4 hours on high or 6-8 hours on low.
2. About 35 minutes before cooking time is up, stir greens into slow cooker. Cover and cook on high until greens are crisp-tender, about 30 minutes. Serve with rice.
Serving Size: 1 cup black-eyed peas and greens with 1/2 cup rice.
Filling extra – add 2 chopped carrots with the vegetables in step 1.
