Ingredients
2 ripe peaches peeled and diced
1 med. red bell pepper diced
1 jalapeno pepper diced
1/2 red onion, peeled and chopped
1/4 cup chopped fresh cilantro
2 tbsp. chopped fresh mint
4 tbsp. lime juice, divided
3 tbsp. honey, divided
1/2 tsp. ground cayenne pepper divided
1/4 tsp. salt
1 lb. cod filets (thawed if frozen)
Instructions
1. For salsa stir together peaches, red bell pepper, jalapeno pepper, onion, cilantro, mint, 2 tbsp. of the lime juice, 1 tbsp. of the honey, 1/4 tsp. of the cayenne pepper and salt in a medium bowl ; cover and chill at least 30 minutes.
2. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high heat. Stir together remaining 2 tbsp. lime juice, remaining 2 tbsp. honey and remaining 1/4 tsp. cayenne pepper in a small bowl; spoon over fish.
3. Grill fish, covered with grill lid, 5-7 minutes on each side or until fish flakes with a fork. Serve with chilled salsa.
