Grilled Steaks with Roquefort Sauce - TastyPlanner.com

Ingredients
1 tablespoon olive oil
1/4 cup minced shallots
2 tablespoons white wine vinegar
6 oz roquefort crumbled
pinch of cayenne
salt
2 lbs strip, or filet steak
minced fresh parsley or chives
Instructions
Preheat broiler (or bbq)
put butter in small saucepan and turn the heat to meduim. When the butter melts and its foam begins to subside, add the shallots and cook until soft, stirring occasionally, about 5 mins. Add the vinegar, stir and cook until it is just about evaporated, 1 to 2 minutes. Turn the heat to low and stir til the cheese melts. keep warm while you grill the steaks.
Season the steaks w/ salt., then grill or broil for 3-4 mins per side for med rare. Serve w/ a spoonfull of sauce and garnish w/ parsley.
