Cajun chicken and sausage gumbo

1 lb Andouille sausage, cut in circles
3 onions, chopped
2 bell peppers, chopped
5 ribs celery, chopped
1 tsp chicken bouillion granules
2 tsp garlic powder
2 Tbs Kitchen Bouquet
Peeled raw shrimp (optional)
Cut up chicken and season.
Brown chicken in oil. Remove.
Microwave sausage circles, blot.
Add flour to hot oil in heavy pot. Make dark brown roux.
Add onion, bell peppers, celery and wilt.
Combine bouillion, garlic powder, salt, pepper, Kitchen Bouquet, and hot water. Add and cook 15 minutes.
Add meats. Cook on low until chicken is done.
Add water as needed.
Adjust seasonings to taste.
Add parsley and onion tops (and shrimp). Cook, covered, for 10 minutes.
Serve over rice.
