Hearty Barley-vegetable soup - TastyPlanner.com

The bright colors of this filling soup are an instant indication it is good for you. Barley has been recognized since roman times as a great source of energy.
Ingredients
2 Tbs. evoo
1 onion finely chopped
1 celery stalk finely chopped
1 garlic clove crushed
6 cups vegetable or chicken broth
3 oz pearl barley rinsed
1 bouquet garni, made with 1 bay leaf, fresh thyme sprig and fresh parsley sprig
2 carrots pealed and diced
14 oz can organic tomatoes
pinch of sucanat
1/2 head cabbage cored and shredded
sea salt and pepper to taste
Instructions
heat the oil in a large pan over medium heat. add the onion, celery, and garlic and stir for 5-7 mins until softened but not browned.
pour in the broth and bring to a boil. add the barley and garni, reduce heat to low, cover and simmer for 30 mins-1 hour until the grains are just beginning to soften.
add the carrots, tomatoes with their juices, and the sucanat and bring the liquid back to a boil. reduce heat to low, cover and simmer another 30 mins, or until the barley and carrots are tender. just before serving remove garni, stir in the cabbage and salt and pepper to taste. continue simmering just until the cabbage wilts. ladle into bowls and serve.
