Hearty Vegetable Stew with Dumplings - TastyPlanner.com

This delicious and nourishing stew is highlighted by the cheesy dumplings. And it tastes good, too!
Ingredients
2 tbs. olive oil
1 red onion, diced
2 celery stalks, sliced
2 carrots, sliced
1 parsnip, sliced
2 c. vegetable broth (I prefer golden broth, rather than tomato based broth)
1/2 c. vegetable broth
2 tbs. flour
1 can northern white beans (drained & rinsed)
1 8 oz. bag frozen peas
2 tsp. thyme
black pepper, to taste
1 c. flour
1/2 c. cheddar cheese, shredded
1 tsp. baking powder
1/2 c. milk or soymilk
2 tbs. olive oil
Instructions
In a large stew pot saute onions, celery, carrots, and parsnips for 5 mins. Add 2 c. of broth. Bring to boiling. Reduce heat and simmer for 5 minutes, until vegetables are crisp-tender.
Meanwhile, mix together 1/2 c. broth with flour until smooth. Once vegetables are done, stir into vegetable mixture. Add beans, peas, thyme, and pepper.
In a small bowl stir together the flour, cheese, baking powder, milk, and oil. Stir until moistened. Drop the dough into 8 mounds on top of the bubbling stew. Cover tightly and simmer 10 minutes or until a toothpick inserted in a dumpling comes out clean.
