Herbed Roasted Potatoes

Ingredients
2 Tbsp butter
1 Tbsp fresh parsley
1/2 Tsp Lemon, grated
1/2 Tsp salt
1/8 tsp pepper
1 1/2 Lb red potatoes
Instructions
Preheat oven to 450*F. In large saucepan, melt butter with parsley, lemon, salt, and pepper over medium heat. Remove from heat and add potatoes cut in half.
Place foil in baking pan. Add mixture and fold fiol to close. Bake 30-45 min.

Nothing special, just good roasted potatoes with a little seasoning. I used regular russet potatoes, btw, and a lot of them. It ended up taking close to two hours to cook properly but I don’t know if that’s because I used different potatoes or what. I also increased the amount of herbs/butter proportionate to the amount of potatoes I used, but I could barely taste anything but the butter. I’d add lemon juice to the lemon gratings in the future, and maybe some basil or rosemary. Anyways, it’s the kind of bare-bones recipe you can play with, which is fun. No big complaints, and if you don’t have your own roasted potato recipe this is a good enough place to start.
