Delicious homemade pasta noodles
The picture is of whole wheat noodles.
Ingredients
4 large eggs
2 1/3 cup all purpose white flour
Instructions
Sprinkle the 2 1/3 cups white flour on the table.
create a well and crack the 4 eggs in it.
Beat the eggs.
Slowly add the flour.
When the flour becomes a sticky dough ball start kneading it with more flour.
Keep kneading and adding flour until it seems smooth and barely sticky. If you stick your finger in the middle of it, it should come out barely moist.
Put the dough in some plastic wrap for 30 minutes
Make a ball and cut the dough into 8 equal pieces. Feed it through your pasta roller.
For fettucini I use a Kitchen Aid mixer and go to #4 or #5.
To store: I cover the noodles in semolina flour then put them in a zip lock bag in the fridge
