Hot German Potato Salad - TastyPlanner.com

This is a great recipe found in the old 1956 edition of Betty Crocker’s Cook Book (a staple book in my household).
This salad is a great accompaniment to any German main dish.

Ingredients
6 medium potatoes, boiled and skinned
6 slices of bacon, cooked
3/4 cup chopped onions, sauted in bacon fat
2 tbsp flour
2 tbsp sugar
1/2 tsp salt
1/2 tsp celery seed
1 dash of pepper
3/4 cup water
1/3 cup vinegar
Instructions
Boil 6 medium potatoes in their skins. Peel and slice thinly.
Fry bacon, remove from skillet and drain. Saute onions in bacon fat until golden brown. Bend in flour, sugar, salt, celery seeds, and pepper. Cook over low eat stirring until smooth and bubbly.
Remove from heat, stir in water and vinegar. Bring to a boil, stirring constantly. Boil 1 minute, carefully stir in potatoes and crumbled bacon. Remove from heat and let stand until ready to serve.
