Ingredients
2 boneless, skinless chicken breast halves, cut into bite-sized chunks
1/2 cup finely chopped red bell pepper
1/2 tsp. wing sauce (vinegar based works best)
1 tsp. chili powder
1 1/2 tsp. garlic salt
1/2 tsp. cayenne pepper
1 Tblsp. lemon juice
Instructions
In a small bowl, combine all ingredients (excluding lemon juice). Mix until chicken is well-coated. Pour onto plate or steamer dish and spread ingredients into a single, even layer; cover. Microwave on high for 3 minutes or until chicken is cooked through. If necessary, continue microwaving at 30-second intervals until cooked.
Sprinkle cooked chicken with lemon juice, and, if desired, additional hot sauce. Salt to taste.
Can be served over mixed spring greens or pasta. Garnish with red bell pepper. Chicken can be served hot or cold.
