* Salad mixture: equal parts Romaine and red leaf lettuce(1 large handful per person)
* Grape tomatoes
* Toasted Pine nuts
* Pomegranate seeds (or dried cranberries)
* Feta cheese (I used reduced calorie)
* Red Onion, diced
* Sea salt and fresh cracked pepper to taste
* Herb croutons
* Garlic Vinaigrette
Add pine nuts to a dry heated pan and cook, stirring frequently, until golden brown. Let cool. In a large bowl add all ingredients, toss and serve. Enjoy.
