Hummus and Rice - TastyPlanner.com
This is an easy to make rice dish with a focus on small portion size and high protein value.
1 Cup of White Rice
2 Tablespoons of Hummus (any flavor)
If you have a rice cooker, prepare the rice according to the instructions on the machine.
If you do not have a rice cooker, follow rice-package cooking instructions.
About 5 minutes before the rice is ready to eat, start cooking the egg. I prefer an over-easy style, but a sunny side up, or even scrambled style would work just the same. Try to take the egg right off the frying pan and into the rice and hummus for best results.
When the rice is finished, mix it with the 2 tablespoons of hummus and then add the egg on top.
Mix it all together and eat.
