Hummus Pitas - TastyPlanner.com

Hummus and vegetable pita sandwiches.
Ingredients
4 medium pitas
1 small container hummus, any variety
1 medium cucumber, finely diced
1 medium tomato, diced
4 leaves of lettuce, shredded
1/2 cup cheese, crumbled or shredded
Instructions
Cut the pitas in half to form pockets. Spread the hummus liberally inside the pocket.
Bake the pitas at 300F for 5-10 minutes or until the hummus is warm.
Finish stuffing the pitas with cheese, cucumber, tomato, lettuce or other vegetables.

These are so simple and so fantastic. I recommend a roasted red pepper hummus, or perhaps a sun dried tomato hummus. Also, baking is a must. They are excellent when toasty warm.
Joanielspeak is right. Baking really is the key. I’ve always found pita and hummus okay but sort of bland. I never realized you could bake it and add cheese! This recipe is quick, easy and delicious and has quickly become a permanent member of my lunchtime repetoire.
