Ingredients
1 C fat-free Plain Yogurt
1 C fat-free Mayonnaise
6 T finely chopped onion
2 tsp ginger
2 tsp curry powder
2 Lbs boneless skinless chicken breast, cut into 1/2 inch strips
2 tsp paprika
1 tsp pepper
4 cups cooked brown or wild rice
Instructions
In a small bowl mix the yogurt, mayonnaise, onion, ginger, and curry powder.
In a non stick skillet over medium heat, cook the chicken for 4-5 minutes. Stir in yogurt mixture. Cook, stirring, for 2 minutes. serve over rice.
