Irish Bean and Vegetable Stew - TastyPlanner.com

Irish stew does not have to be filled with lamb. Try this combination of white beans, cabbage, potatoes, pearl barley, and carrots.
Ingredients
1 large onion, chopped
3 ribs celery, chopped
2 cloves garlic, minced
1/2 head cabbage, chopped
4 carrots, sliced
1/2 pounds potatoes, chopped
1/3 cup pearled barley
1 bay leaf
1 teaspoon thyme
1/2 teaspoon caraway seeds
1/2 teaspoon Rosemary
1/2 teaspoon Freshly ground black pepper
8 cups golden vegetable broth (enough to cover the vegetables)
2 cans great northern beans, drained
Instructions
Place everything, but the beans, in a pot on the stove. Bring to a boil.
Turn down to simmer for 1 hour. Stir in the beans and cook until the beans are hot.
Serve with Irish soda bread!
