Ingredients
1 Tbsp yeast
1/2 c warm water
1 Tbsp or less salt
1 Tbsp sugar
2-3 c warm water
7-8 c flour, half whole-wheat and half white
1 Tbsp water
Instructions
Soften yeast in 1/2 c water and sugar.
Mix salt and 2-3 c warm water.
Mix yeast into salt water mixture.
Add flour, making a ball.
Knead very thoroughly – 15-20 minutes, working in the flour. You may use a little less than called for.
Cover and let rise 1.5 hours until doubled.
Punch down and let rise again 1 hour.
Divide in half and make two long loaves. Place on a greased, cornmeal-sprinkled pan. Slit diagonals across loaf.
Cover and let rise 1-1.5 hours until BIG.
Brush with egg just before baking.
Bake 375 for 20 minutes or until done.
