Thai-style chicken salad

Ingredients
300g chicken mince
1 bag coleslaw mixed veg
3 finely-sliced kaffir lime leaves
1 stalk lemongrass, finely sliced
1/4 cup fresh mint leaves
1 red chili, seeds removed, finely sliced
1 spring onion, finely sliced
1/4 cup fish sauce
Juice of 1 lime
1 tsp sugar
Instructions
Cook the mince with a little oil, breaking it up and stirring until cooked. Set aside to cool.
To make dressing, combine the fish sauce, sugar and lime juice. Adjust to your liking.
Prepare all the other ingredients and combine everything in a large bowl and mix well. Add the dressing and stir.
Serve with steamed rice.
