"Labor Day" Egg and Potato Salad - TastyPlanner.com

Perfect side dish for labor day (or any day really) barbecue
Ingredients
5 strips bacon
1 medium sweet onion (diced)
1/4 cup banana peppers
1 tbsp Capers
1/4 cup dill pickle
1/4 cup mayonaisse
1/4 cup sour cream
1 tbsp dijon mustard
garlic powder (to taste)
black pepper (to taste)
1 1/2 lb red potato (medium - large dice)
5 eggs (hard boiled)
1 cup green onions (chopped)
Instructions
To make the dressing, cook bacon and onions over medium heat until crispy. Chop peppers, pickles, capers and combine with Mayo, Sour Cream, Mustard and Lemon juice. Add bacon and onions. Salt, pepper, and garlic powder to taste.
Boil potatoes and eggs, when finished cool in an ice water bath.
Finely chop majority of eggs, reserve a few whites at larger sizes.
Comibine eggs with dressing and add potatos. Finish with chopped green onion.
