Good in a slow cooker
Ingredients
4 Large, Meaty Lamb Shanks
1 can artichokes
1 medium onion, chopped
10 Cloves Garlic, Peeled
2 Tablespoons Fresh Rosemary, Chopped
5 Tablespoons olive oil
1/2 Cup Good Quality Black Olives, Pitted And Left Whole
1 Cup white wine
1 Cup Chicken Or Beef Broth
1 Cup Tomato sauce
1/2 Cup Fresh Parsley, Chopped
Instructions
Preheat the oven to 350 degrees F. Season the shanks with salt and pepper, and brown them well in a ovenproof pan in the olive oil. Remove the shanks to a plate. Add the drained artichokes, onions, garlic and
rosemary in the same pan for about 10 minutes, or until the vegetables have softened, and are beginning to brown. Add the wine, olives, tomato sauce, and broth to the pot. Mix well. Return the shanks to the pot,
and cover them with the sauce and vegetables. Cover, and cook for 2 hours. Serve the shanks topped with some of the tasty sauce and vegetables.
