Layered Enchilada Casserole
Vegetable cooking spray
1/2 pound ground turkey
1 cup chopped onion
2 cloves garlic, minced
1/2 tsp chili powder
1 15 oz can red kidney beans, drained
1 8 oz can tomato sauce
2 cups non-fat cottage cheese
1 egg white, lightly beaten
9 6 inch corn tortillas, halved
1 cup shredded reduced fat monterey jack cheese
1 cup shredded lettece
1 cup seeded, chopped tomato
1/2 cup nonfat sour cream alternative
Coat a non-stick skillet with cooking spray; place over medium-high heat until hot. Add turkey and next 2 ingredients; cook until turkey is browned, stir to crumble. Add next 4 ingredients; stir well. Reduce heat, and simmer 5 min, stiring occasionally; set asside.
Combine cottage cheese & egg white in a small bowl; stir well and set asside.
arrange 6 tortilla halves in bottom of a 3 qt casserole; spread1 cup turkey mixture over tortillas. Spread 2/3 cup cottage cheese mix over turkey; top with 1/3 cup Monterey Jack cheese.
Bake at 350 for 45 min. or until thoroghly heated. Let stand for 5 min. Serve topped with lettece, tomatoe, and sour cream.
Note: Omit baking step, & microwave at Med High (70% power) for 10 min.
