I love this one!
1 lb cooked chicken (I use thighs - boil & debone)
30 oz can black beans, drained & rinsed
2 c light sour cream
2 c Mexican shredded cheese
4 oz. can chilies
12 corn tortillas – cut into 2 in strips
Mix – sour cream, chilies, 1 c cheese & pepper to taste. Add chicken & mix well.
In lasagna pan; layer – ½ tortillas, top with ½ mixture; repeat. Top with remaining cheese.
Cook @ 350 for about 30 minutes – until filling is bubbly and cheese is melted.
Allow to cool 5 minutes.
Serve with salsa.
