3/4 c milk
1/3 c ww or reg couscous
1/2 c lemon yogurt
1/2 c light s. cream
1 T honey
1/4 tsp finely shrdded lemon peel
3 c assorted fresh fruit
1. In a med saucepan, bring milk and dash of salt to boiling: stir in couscous. Simmer, covered, 1 min. Remove from heat; let stand 5 min. Stir w/ fork until fluffy.Cool.
2. In a sm bowl, combine yogurt, s. cream, honey, and lemon peel; stir into couscous.
3. To serve, divide half of the assorted fruit among six parfait glasses. Spoon couscous mixture over fruit; top w/ remaining fruit. If desired garnish w/ chopped crystallized ginger and fresh mint.
