Ingredients
Cupcakes:
2 cups lemon cake mix
1 cup diet lemon-line soda, Sprite
3/4 cup fresh blueberries, divided
1/4 cup egg substitute
1 teaspoon baking powder
1/4 teaspoon vanilla, optional
Frosting:
1 cup cool whip (lite or free), thawed
1/2 cup skim milk
2 tablespoons sugar free instant pudding mix, lemon or vanilla
Topping:
12 or more additional blueberries for decoration
Instructions
Preheat oven to 350 degrees.
Large bowl – mix all ingredients for cupcakes until mixture is lump free.
Spray 12 cup muffin pan with nonstick spray or use paper lining. Distribute mixture evenly into the cups.
Place half of the blueberries on top of the cake mixture, about 3 – 4 blueberries in each cup. Bake for 8 minutes.
Remove pan from the oven and place the rest of the blueberries into the cups (remember to reserve 12 if you want to put one on top of the frosting), pressing them into the cake slightly. Return the pan to the oven and bake for 5 – 7 more minutes. Cupcake edges should be slightly browned but not over baked.
Cool completely and then frost.
Frosting: combine pudding and milk in a medium bowl. Use an electric mixer on medium for 1 to 2 minutes. Let it set up for 5 minutes. Fold in Cool Whip and refrigerate until cupcakes are done and cooled.
Frost cupcakes evenly adding one blueberry to each of the cakes.
