Lentil Brown Rice Cakes - TastyPlanner.com

Ingredients
1 cup green lentils
2 Cloves Garlic
1 tsp dried oregano
1/4 cup minced red onion
2 cups cooked brown rice
3 egg whites
2 Tbsp whole-wheat flour
1/4 tsp. Cajun seasoning
1/2 cup plain yogurt
2 Tbsp Cilantro
1/2 lime, juiced
Salt and pepper to taste
Instructions
Put lentils, garlic, oregano, and onion in medium saucepan. Cover with water. Bring to a boil and simmer 30 minutes. Cook until tender, adding water as needed.
Cool lentils at least 10 minutes.
Mix rice, lentil mixture, egg whites, flour, and seasonings. Form 10 patties. Spray skillet and cook 2-3 minuted per side.
Blend yogurt, cilantro, lime, salt and pepper.
