Loaded Potato Soup - TastyPlanner.com
All the good stuff you like on a baked potato, in a soup
2 Tbsp vegetable oil
1 med onion , diced
4 med potatoes, cut into chunks
4 cups chicken stock, divided
1 can Cream of Celery Soup
2 cups cheddar cheese, shredded
Saute onion in oil until onion is translucent and soft. Add 2 cups stock and potatoes, bring to boil, cook until potatoes are soft. Remove from heat and with a hand mixer or whisk, stir vigorously until potatoes are mashed. Add the rest of the stock and return to medium heat. Bring to a simmer. Add soup and cheddar cheese, stir until cheese is melted. Season with salt, pepper to taste
Ladle into serving bowls, add bacon, sour cream and green onion or chives as desired. Serve with a crusty French bread.
