Good, easy Low-Sodium Chili
3 cups dried kidney beans, boiled without salt
1/2 pound lean ground beef
1 tablespoon extra-virgin olive oil
1 onion, diced
1 Red Pepper, diced
1/4 pound mushrooms, diced
1/2 cup water, use water beans were cooked in
1 can no-salt-added diced tomatoes
1 teaspoon chili powder, more or less to taste
1 tablespoon fresh oregano, chopped but can use dried
1 tablespoon Cumin
pepper to taste
1. Soak beans overnight. Boil per the instructions on the package. Do not discard the cooking liquid.
2. Saute the meat in a nonstick pan until nearly cooked. Add the oil, onions, peppers, and mushrooms and continue to saute. In a large pot, combine the cooked meat, tomatoes, sauteed vegetable, 1/2 cup of the bean cooking liquid, and the chili powder, oregano, cumin, and pepper; and bring to a light boil. Mix together the cooked meat and sauteed vegetables with the cooked beans. Simmer for half an hour, uncovered. To make sauce thicker add 1/2 can of no-salt added or Contadina tomato paste. Serve hot.
