A bit of an untraditional mac and cheese.
The feta adds a little tartness
Ingredients
2 T butter
2 T flour
1 1/2 C milk, heated to lukewarm
6 oz grated cheddar
6 oz grated Jack cheese
6 oz crumpled Feta
1/2 cup dried bread or cracker crumbs
Instructions
Preheat oven to 450 degrees
Butter a shallow 3 qt baking dish
Bring a large pot of water to a boil. Add pasta, cook for 5 minutes stirring occasionally. Drain, shake of exess moisture. Return pasta to dry pan.
In heavy based saucepan, melt butter, then whisk in flour, stirring constantly over medium heat for 2 minutes.
Remove pan from heat and whisk in milk slowly a little at a time so no lumps form. Add nutmeg, salt and pepper to taste. Return pan to heat and bring to a boil stirring constantly. Turn heat to low and let simmer 5 minutes.
Pour sauce over cooked macaroni. With large metal spoon, gently fold pasta, sauce and macaroni together. Transfer to prepared baking dish.
Sprinkle with crumbs and set dish on top rack of hot oven. Bake 20-25 minutes or until pasta is golden and crusty on top.
