Machine Shed Baked Potato Soup

Ingredients
2.5lb - red potatoes, quartered
1/2lb - raw bacon, diced
1 - jumbo yellow onion, diced
1/4 bunch - celery, diced
1/4 bunch - parsley, chopped
1qt - water
2oz - chicken stock
1qt - milk
1tsp - S&P (each)
1 1/2 stick - margarine
6oz - flour
1 cup - whipped cream
shredded Colby cheese
scallions, chopped
Instructions
Boil potatoes in water for 10 min, drain and set aside. In a large heavy pot, saute bacon, onions and celery over med high heat until celery is tender. Drain bacon grease and return all back into pot. Add milk, water, chicken stock, s&p. Allow to heat until hot, but don’t boil.
In a heavy saucepan, melt margarine and add flour to create a roux. Mix well and allow to bubble, stiring for one min. While constantly stiring, add roux to soup very slowly. Stir until creamy and thick. Stir in potatoes, parsley and cream. Garnish with shredded colby cheese and green onions.
