A great twist on the classic way of cooking asparagus
Ingredients
2 Tablespoons of Extra Virgin Olive Oil
5 Tablespoons of freshly grated Parmesan cheese
sea salt and freshly ground pepper
Instructions
Prepare the asparagus by rinsing them thoroughly, break off any tough, white bottoms and discard. Cut into 1 and 2 inch sections, slicing the asparagus at a slight diagonal.
Bring a medium sized saucepan half way with water to a boil. Add the asparagus and bring the heat down to a low simmer.
When the asparagus are soft, drain the hot water and throw the asparagus in a bowl with the olive oil, sea salt and ground pepper. Add the grated parmesan cheese and make sure it is evenly coating the entire bowl of asparagus.
