Mediterranean lentil salad
Ingredients
1 cup brown lentils
4 cups water
2 bay leaves
1 tsp thyme
2 garlic cloves, chopped
1/3 cup sun-dried tomatoes
1/2 cup diced celery
1/2 cup Red Pepper, diced
1/4 cup red onion, diced
1/2 cup Fresh Parsley, Chopped
Dressing:
1/3 cup olive oil
3 tbsp red wine vinegar
1 tsp ground fennel
1 tsp dijon mustard
Instructions
In a saucepan, bring lentils, water, bay leaves, thyme and garlic to a boil. Simmer for 20 minutes.
Combine celery, peppers, onion, parsley and tomatoes in a bowl.
In a separate bowl, whisk dressing ingredients together.
Once lentils are done, drain and toss with vegetables and dressing.
