Mexican Chicken and Rice - TastyPlanner.com

Ingredients
chicken pieces
1 onion
1 green pepper
1 cup basamati rice
2 tspn ground cumin
1.5 cups chicken stock
425g can mexican tomatoes
2 tspn chopped coriander
salt and peper
Instructions
Cook chicken until golden brown. Add onion and pepper and cook for 2 mins. Add rice and cumin and cook for a further 1 to 2 mins coating the rice in the onion oil. Add chicken stock and tomatoes and bring ot the boil. Cover and cook over a low heat for 12 – 15 mins or until rice is tender and liquid is absorbed. Season with salt and peper and stir in the corriander. Serve with a green salad.
