Ingredients
6 oz (175 g) frozen chopped spinach thawed or fresh basil
1 cup ricotta cheese
1/2 cup Parmesan cheese
1/2 cup shredded Cheddar cheese
2 Tbsp sour cream (optional)
4 eggs
1/4 milk
2 Tbsp chopped fresh or dried parsley
1 tsp ground cumin
1/4 tsp hot sauce or dash of cayenne pepper
1/4 tsp salt
1/4 tsp pepper
Instructions
1. Preheat oven to 375 F. Lightly grease 12 nonstick muffin cups, or use muffin liners.
2. In fine-mesh sieve, drain spinach well, pressing to remove as much liquid as possible. Place spinach in a medium bowl, along with ricotta cheese, Parmesan cheese, cheddar cheese and sour cream, if using.
3. In another bowl, beat eggs, milk, parsley, cumin, hot sauce, salt and pepper; stir into spinach mixture.
4. Spoon mixture into prepared muffin cups. Bake for 20 to 25 minutes minutes. Let stand for 5 minutes; remove from muffin cups. Serve warm, accompanied by salsa.
