Minted Couscous with Peas And Mustard Seed - TastyPlanner.com
Chef: Eggplantpasta
Tasty seasoned couscous. Great as a side dish with marinated lamb.
Ingredients
2 tsp oil
2 tsp black mustard seeds
2 tbsp butter
2 1/4 cups of vegetable stock
1 1/2 cups of couscous
1 cup of cooked green peas
4 green spring onions chopped
1/2 cup oil
1/2 cup cider vinegar
1 tsp sugar
1/4 cup chopped fresh mint
Instructions
Heat oil in pan, add mustard seeds, cook covered until seeds start to pop.
Add butter and stock, bring to boil.
Take off heat and add couscous. Allow to stand for 5 minutes until the stock is absorbed.
Add peas and spring onions and stir through with fork.
Mix sugar, oil, vinegar, and mint. Shake well and poor over couscous.
Serve warm.
