Miso soup is a salty, savory bowl with scallions and tofu, often a precursor to an excellent tray of sushi.
1/4 cake of firm tofu
2 cups chicken broth
2 tablespoons miso paste
Drain the tofu and cut it into small cubes – (about 1/4 inch squares). Finely slice the scallions.
Bring the broth to a boil; whisk miso paste into the broth until the miso has softened and dissolved. Turn the heat to medium-low and add the tofu. Do not let the broth boil again; simmer lightly until the tofu has warmed, add the scallions and serve.
