Mixed salad with pinenut dressing - TastyPlanner.com

Mixed salad with toasted pinenut, balsamic vinegar and olive oil dressing
Ingredients
2 tbsp balsamic vinegar
3 tbsp extra virgin olive oil
1 apple, chopped finely
1 red pepper, seeded and chopped
10 cherry tomatoes
Instructions
Toast pinenuts over high heat in a frying pan
Keep stirring them
When nicely brown, crush them all up in pestle and mortar
Add in salt and pepper
Add balsamic vinegar and olive oil, and give a good shake up
Chop apple, peppers, tomatoes up
Put in bowl with mixed salad leaves
Give a good shake up
Drizzle dressing over salad and give another good shake
