Chef: Elizabeth Tindol
Asian-style recipe.
Ingredients
1 lb beef (sirloin or ribeye) ; cut in 1/4 inch cubes
1/4 cup cornstarch
3 cups prepared brown rice ; moist
1 teaspoon fresh ginger ; minced
2 teaspoons garlic ; minced
1/4 cup soy sauce
1/4 cup brown sugar
1 tablespoon canola oil
1 (15oz.) bag frozen broccoli cuts
Instructions
Dip beef in cornstarch; lightly coating each piece. Let rest about 8 minutes to allow cornstarch to stick. Meanwhile, prepare brown rice according to package directions. Set aside.
Make stir-fry sauce: In a medium sauce pan over medium-low heat add ginger, garlic, soy sauce, brown sugar and 1 cup water. Raise heat to medium and boil 3 minutes or until sauce thickens. Remove from heat.
In a large skillet (or wok) heat oil over medium heat until hot but not smoking. Add beef and saute 5 minutes. Add broccoli and continue to cook 5 minutes or until broccoli is tender. Add sauce to broccoli/beef mixture. Spread cooked rice on a serving platter and top with beef/broccoli mixture.
