Moroccan Beef Stew w/butternut squash - TastyPlanner.com

Ingredients
2 T oil
1 lb stew beef (round/chuck) cut into chunks
1 onion, chopped
1 T ginger, minced
2 cloves garlic, minced
1 lb butternut squash (peeled and cubed ~2.5 cups)
1 8 oz can tomato sauce
1.5 C beef broth
1.5 t ground cumin
1 t cinnamon, ground
1/2 t crushed red pepper flakes
3 c cooked whole wheat couscous
1/4 c sliced almonds, toasted (opt)
4 t parsley, minced (opt)
Instructions
Cook couscous.
Heat oil in 4 qt saucepan over med-high heat. Cook beef until brown (5 mins). transfer beef to plate.
Add onion to pan until soft, add ginger and garlic for 1 min.
Return beef to pan and stir in remaining ingredients (ex. last 3).
Bring to boil, cover and simmer til beef is tender (30-35 mins)
Spoon Beef over couscous and sprinkle with almonds and parsely.
