Ingredients
3 cups chopped onion
3 cloves garlic, chopped
1 tsp ground cumin
1 tsp Turmeric
1/2 tsp cinnamon
1/2 tsp cayenne pepper
1/2 tsp paprika
1 cup sliced carrots
4 cups sliced sweet potatoes
3 cups cubed eggplant
4 cups cubed zucchini
2 or 3 large tomatoes,chopped
1 1/2 cups garbanzo beans
3/4 cup currants or 1/2 cup raisins
1/4 cup fresh, chopped parsley
Instructions
1. In a large pot, boil onions in a small amount of water.
2. Add garlic and spices, stirring continuously. (Keep an inch of
water at bottom of pot, being careful not to scorch.)
3. Add carrots, sweet potatoes, eggplant, zucchini, tomatoes, beans, saffron and currants.
4. Stir from bottom of pot to mix all ingredients. Cover and simmer on low until vegetables are tender
