Creamy mushrooms.

Ingredients
500 grams mushrooms
2 tbsp olive oil
1 tbsp butter
1 tbsp chopped thyme
50 ml whiskey
4 tbsp double cream
Instructions
Pick over and wipe musrooms, dust off any loose earth (don’t wash them). Heat the oil and butter until the foam, and throw in the mushrooms. Season with salt and pepper, toss over a gentle heat until the mushrooms release their water. Turn up the heat, sprinkle in the thyme, and let everything bubble fiercly until water has evaporated and the mushrooms begin to fry.
Splash in a little whisky and set it alight – this caramelises the mushrooms and concentrates the flavours. Stir in the cream, taste and adjust the seasoning. Bubble it all up again, and serve.
